Fats are an important source of energy and are also used as a carrier for flavours, vitamins and pigments. Unsaturated fats are particularly rich in essential fatty acids. These lipids are highly susceptible to lipid peroxidation.

  • maintain their nutritional quality and 
  • ensure they are able to fulfil their important role as carrier. 

Oxidised fats lead to a faster degradation of the nutrients they carry and are easily detectable to our senses due to the typical rancid smells and flavours arising from oxidative spoilage.
